Non-organic dried apricots are treated with sulphur to preserve the orange colour of the apricots. This sulphur treatment is not allowed for organic apricots, and this is the reason why organic dried apricots are somewhat darker than the orange non-organic ones. Use apricots as a sweet snack, in green salads and in baked goods. Chop them finely and also use them as a topping on various breakfast cereals.
