Chickpeas, also known as garbanzo beans, come from a legume that originated in the Middle East. Chickpeas are typically used as the main ingredient in hummus and falafel, but can also be used in ragouts, vegetable dishes and mixed salads. It is important that dried chickpeas are soaked for 24 hours before being boiled in clean water for about 45 minutes. Dried chickpeas have a long shelf life when stored in a dry place. Cooked chickpeas can be kept for a few days in the refrigerator at 5 degrees. 1 dl dried chickpeas (80g) becomes about 3 dl when soaked and then cooked.
