Organic green lentils from Svansø are an annual herb of the pea family, grown for its lentil-shaped seeds. There are many varieties of lentils and they are all very high in protein. Green lentils can be soaked for 8-10 hours before use. This shortens the cooking time considerably, so they only need to cook for a few minutes. Green lentils are great in stews, salads and soups.
