Lentil is an annual herb of the pea family, cultivated for its lentil-shaped seeds. There are many varieties of lentils and they are all very high in protein. Lentils are one of the more commonly used ingredients in Indian cuisine, where it is called "dal". Red lentils may cook out slightly during cooking and the consistency is slightly floury. Lentils are typically used in soups, stews, salads and for lentil puree.
