1. Preheat the oven to 200°C.
2. Wash and scrub the carrots well.
3. Place them in a gastro tray.
4. Add the thyme stalks, orange juice and honey to the carrots.
5. Sprinkle with salt and pepper.
6. Bake the carrots until tender and the orange-honey marinade has turned into a syrup, about 60 minutes. Turn the carrots during this time.
