Baked yellow beets with balsamicoglace and feta

Preparation

1. Clean the yellow beets and bake them whole for 1 hour and 15 minutes. at 150° convection oven.

2. Let them cool.

Balsamic ice cream
1. Balsamic vinegar and honey must be reduced in a saucepan to a syrup-like consistency. Takes about 20-30 minutes over medium heat.

2. Break yellow beets into pieces, arrange them on a plate and crumble with feta. Top with balsamic glaze and tarragon.
