Chicken with apricot sauce

Preparation

1. Mix the apricot cream with lightly whipped cream, curry paste and lightly browned onions.

2. Pour the mixture over the chicken fillets and roast in the oven at 180 degrees for 30 minutes.

3. Serve with hot rice or a cold quinoa salad.

TIP:
If you want a stronger or more acidic flavour, you can add a little chilli or lemon.
