Preparation

1. Place the apricot purée, tomato concentrate, balsamic vinegar, smoked paprika, soy, water, salt and pepper in a saucepan and bring to the boil.

2. Toast bread and fry chicken.

3. Assemble the sandwich with salad mayonnaise, lettuce, chicken, apricot BBQ, pickled red onions and pea shoots.

Quick BBQ:
Mix the apricot porridge with ketchup, smoked paprika and soy.
