Preparation

1. Melt chocolate over a water bath.

2. Beat the egg yolks and sugar together well.

3. Mix the melted chocolate with the beaten egg yolks.

4. Beat the egg whites until stiff and fold them and the finely grated orange zest into the chocolate mixture.

5. Fill into piping bag and refrigerate.

6. Serve the dessert with chocolate mousse, prune porridge, crumble, mint and grated orange zest.
