Quinoa salad with grilled peppers

Ingredients

Preparation

1. Rinse the quinoa and boil it in lightly salted water for 15 minutes.

2. Mix the lemon juice and zest, tomato paste, olive oil, salt and pepper well together and add to the cooked quinoa.

3. Add the grilled peppers, kalamata olives and pea shoots.

4. Cut the cauliflower into crudite and put them in ice water.

5. Drain and arrange on the salad just before serving.

Dressing
6. Mix Greek yoghurt with olive oil, garlic and lemon juice and season with salt and pepper.

Accessories
7. Split the pita bread and cut it into triangles.

8. Place the triangles on a baking tray, brush with olive oil and bake in the oven at 180°C for about 10 minutes until crispy.

9. Serve quinoa salad with dressing and pita chips.
