Clover is a very common plant in Denmark. It is a genus with a lot of different species, all belonging to the pea family. The most common clover species are red clover and white clover.
The clover is found growing wild on beach meadows, in dunes, on roadsides and in grass fields and lawns. The clover plant spreads with creeping stems that take root.
The clover leaves are composed of three green leaves, and in rare cases of four leaves. According to ancient superstition, a four-leaf clover brings good luck to whoever finds it. The flowers on the clover are clustered in heads, and bloom from May to September.
Clover flowers are particularly attractive to bees, as clover has a high nectar production. At the same time, the clover is self-sterile and the plant is therefore also dependent on insect pollination by bees for the flowers and thus the function of the clover to develop.
Honey collected on clover, gives a nice mild and rounded sweetness. The consistency is creamy and with a beautiful pearly colour.
