It smells like the most beautiful summer day when the lime trees are in full bloom. The lime tree is also called the tree of love and joy, as the leaves have a heart-shaped appearance and the whole tree crown often looks like a big heart. It is one of the few large trees that is pollinated by bees and not by the wind.
The lime trees can grow up to 30 m tall and up to 300 years old. Lime trees are naturally found throughout Europe, especially in Eastern Europe.
The lime tree blooms in July, with a sea of small nectar-like flowers that smell fantastic. The flowers of the lime tree are bisexual, i.e. both male and female flowers. The flowers are white-yellow and have 5 petals, 5 sepals, a lot of stamens and a stigma in the middle. The lime blossom contains a lot of nectar, which helps to attract bees and insects. These carry pollen from one flower to another, thus pollinating the lime flowers.
Lime honey has a mild taste and a light colour. The consistency is soft and buttery.
