Preparation

1. Lightly fry the onion, garlic, chilli and carrots in olive oil.

2. Sauté the ginger, curry and red lentils before adding the water, salt, chopped tomatoes, coconut milk, lemon juice and grated lime zest.

3. Cook until the lentils are cooked and still have "bite".

4. Season the dish and sprinkle with the semi-dried cherry tomatoes before serving.

Topping:
For the topping, mix the ingredients and season to taste.
